Owner, Hanju Tofu Pot
As the tender white tofu soaks in the sauna of the bubbling pot, gently place fresh kimchi into your mouth and enjoy the crisp, spicy taste of the side dish. This is the joy of hot pot. Shou-Hung Chang, who has opened many tofu hot pot restaurants throughout Taiwan, talks about food and reminisces about the past with his friend Annie, the owner of Sasaya Bistro in Burnaby.
Mr. Chang, as an ethnic Chinese who grew up in South Korea, has a cultural understanding of both South Korea and Taiwan. Coming from a family that ran a fast food restaurant when he was small, how does Mr. Chang describe life in South Korea? On an island with such a diverse and rich food culture, what kind of new flavour will Mr. Chang bring us to challenge our already-existing impressions of Korean food?
Originally, Mr. Chang moved to Taiwan for post-secondary studies; in the blink of an eye, he has settled in Taiwan with family and is the proud grandfather of two grandchildren. His family has become the epitome of multicultural influences coming together in harmony, reflecting the progress of the multi-ethnic societies that both Taiwan and Canada are working towards today!
